🤎 Ingredients
For the Cookies

110 g unsalted butter, melted

95 g granulated sugar

105 g dark brown sugar

1 large egg

1 tsp vanilla extract

1 tbsp instant espresso powder

225 g all-purpose flour

½ tsp baking powder

½ tsp baking soda

½ tsp salt
For the Mascarpone Cream

180 g mascarpone
-
115 g heavy cream
-
1 tsp vanilla extract
-
90 g icing sugar, sifted
To Finish
-
1 tbsp unsweetened cocoa powder (for dusting)
🤎 Instructions
1. Preheat the Oven
Preheat your oven to 180°C (350°F) and line your baking trays with parchment paper.
2. Mix the Wet Ingredients
In a mixing bowl, whisk together the melted butter, granulated sugar, and dark brown sugar until smooth.
Add the egg and vanilla extract, whisking until fully combined.
3. Combine the Dry Ingredients
In a separate bowl, whisk together the flour, espresso powder, baking powder, baking soda, and salt.
4. Make the Cookie Dough
Add the dry ingredients to the wet ingredients and stir just until everything comes together.
Do not over-mix — this keeps the cookies soft.
5. Shape the Cookies
Scoop 65 g of dough per cookie.
Roll each portion into a smooth ball and place on the prepared trays, leaving enough space for spreading.
6. Bake
Bake the cookies for 10 minutes, until the edges are set but the centers remain soft.
Allow them to cool completely before decorating.
7. Make the Mascarpone Cream
In a bowl, whip the mascarpone, heavy cream, vanilla extract, and sifted icing sugar until smooth, thick, and pipeable.
8. Decorate
Pipe a generous swirl of mascarpone cream onto each cooled cookie.
Dust lightly with unsweetened cocoa powder for the classic tiramisu finish.
