Creamy, rich, and absolutely satisfying, this Steak Alfredo Pasta combines tender, juicy steak with silky garlic cream sauce and perfectly cooked pasta. It’s an indulgent meal that feels like a restaurant favorite — but simple enough to make at home!
🍝 Ingredients
For the Steak:
-
1 steak (250–350g, any cut: sirloin, ribeye, or striploin)
-
Salt and black pepper, to taste
-
1 tbsp olive oil or neutral oil
-
2 tbsp butter
-
3–4 cloves garlic (2 for basting, 2 for the sauce), chopped
-
1 sprig rosemary
-
1 sprig thyme
For the Alfredo Pasta:
-
120 g pasta (fettuccine, linguine, or rigatoni)
-
½ cup heavy cream
-
2–3 tbsp reserved pasta water
-
½ tsp Italian seasoning (or to taste)
-
Grated Parmesan cheese, for topping
-
Chopped chives, for garnish
👩🍳 Instructions
1️⃣ Cook the Pasta
-
Bring a large pot of salted water to a boil.
-
Add the pasta and cook until al dente — usually 1–2 minutes less than the package directions.
-
Before draining, reserve about ½ cup of pasta water. Set both aside.
2️⃣ Prepare the Steak
-
Pat the steak dry with paper towels — this helps it sear beautifully.
-
Season both sides generously with salt and pepper.
-
Heat olive oil in a skillet over medium-high heat until shimmering.
-
Sear the steak for 2–3 minutes per side until a golden crust forms.
-
Lower the heat slightly, then add butter, half the garlic, rosemary, and thyme.
-
Tilt the pan and baste the steak continuously with the melted butter for 1–2 minutes per side.
-
Cook to your desired doneness (125°F / 52°C for medium-rare).
-
Transfer to a plate and let it rest for 5–10 minutes.
3️⃣ Make the Alfredo Sauce
-
Pour out most of the butter from the pan, leaving about 1 tbsp.
-
On low heat, sauté the remaining garlic for about 30 seconds, until fragrant.
-
Pour in the heavy cream, scraping up any browned bits from the pan (that’s pure flavor!).
-
Season with salt, pepper, and Italian seasoning.
-
Simmer gently for 1–2 minutes until slightly thickened.
4️⃣ Combine Pasta and Sauce
-
Add the cooked pasta into the sauce with 2–3 tbsp reserved pasta water.
-
Toss or stir for 1–2 minutes until the sauce thickens and evenly coats the pasta.
-
Taste and adjust seasoning if needed.
5️⃣ Slice and Serve
-
Slice the rested steak into strips.
-
Arrange it on top of the creamy Alfredo pasta.
-
Finish with grated Parmesan and a sprinkle of chopped chives.
💡 Tips
-
For extra flavor, add a pinch of chili flakes or nutmeg to the sauce.
-
If you prefer a lighter version, swap heavy cream for half-and-half.
-
Always rest your steak before slicing — it keeps the juices in!
