Ingredients

2 tbsp peanut butter

1.5 tbsp soy sauce

A splash of dark soy sauce (for color)

2 tsp toasted sesame oil

1 tsp chili oil (or more to taste)

1 clove garlic, finely chopped
Instructions

Make the sauce:
In a mixing bowl, whisk together peanut butter, soy sauce, dark soy sauce, sugar, sesame oil, chili oil, ginger, and garlic until smooth. -
Cook the noodles:
Prepare the noodles following package directions. Drain them and keep a small amount of the cooking water. -
Adjust the sauce:
Add about ¼ cup of the reserved cooking water into the sauce to loosen it. Add more if needed until it becomes silky. -
Combine:
Toss the cooked noodles into the sauce, mixing well until they are evenly coated. -
Serve:
Garnish with roasted peanuts and sliced green onions. Enjoy warm!
