Peanut Noodles 🥜😍

A quick, creamy, and flavorful noodle dish that comes together in minutes! Add your favorite veggies and protein to turn it into a complete, satisfying meal. 🫶🏼


Ingredients

  • 2 servings wheat noodles

  • 2 tbsp peanut butter

  • 1.5 tbsp soy sauce

  • A splash of dark soy sauce (for color)

  • 1.5 tsp sugar

  • 2 tsp toasted sesame oil

  • 1 tsp chili oil (or more to taste)

  • 1 tsp grated ginger

  • 1 clove garlic, finely chopped


Instructions

  1. Make the sauce:
    In a mixing bowl, whisk together peanut butter, soy sauce, dark soy sauce, sugar, sesame oil, chili oil, ginger, and garlic until smooth.

  2. Cook the noodles:
    Prepare the noodles following package directions. Drain them and keep a small amount of the cooking water.

  3. Adjust the sauce:
    Add about ¼ cup of the reserved cooking water into the sauce to loosen it. Add more if needed until it becomes silky.

  4. Combine:
    Toss the cooked noodles into the sauce, mixing well until they are evenly coated.

  5. Serve:
    Garnish with roasted peanuts and sliced green onions. Enjoy warm!
