Sweet, spicy, and savory — the perfect quick dinner after a long day!

These Gochujang Soy Chicken Thighs are rich, sticky, and packed with umami flavor. They pair beautifully with leftover rice or noodles, making them the perfect weekday dinner after work or classes.


🥢 Ingredients (Serves 2)

For the Chicken:

  • 4 chicken thighs (boneless or bone-in)

  • Salt and black pepper, to taste

  • 1 tbsp neutral oil (such as canola or sunflower oil)

  • 1 tbsp butter

  • 3 cloves garlic, minced

  • 1 tsp grated ginger (optional but recommended)

For the Sauce:

  • 1 tbsp gochujang (Korean red chili paste)

  • 1 ½ tbsp soy sauce

  • 1 tbsp honey (or brown sugar)

  • 1 tbsp rice vinegar (or lemon juice)

  • 1 tsp sesame oil

  • 1–2 tbsp water (to thin the sauce as needed)

For Garnish:

  • Toasted sesame seeds

  • Sliced green onions

  • Fresh lime squeeze (optional)


🔥 Instructions

1️⃣ Season & Sear the Chicken

  1. Pat chicken thighs dry with paper towels — this helps them sear properly.

  2. Season both sides generously with salt and black pepper.

  3. Heat neutral oil in a large pan over medium-high heat.

  4. Sear the chicken for 4–6 minutes per side until golden brown.

    • If using bone-in thighs, cook closer to 6 minutes per side.

  5. Once browned, remove from the pan and set aside.


2️⃣ Build the Sauce Base

  1. Reduce the heat to medium.

  2. Add butter to the same pan.

  3. Once melted, add minced garlic and grated ginger (if using).

  4. Sauté for 30 seconds, just until fragrant — don’t let it brown.


3️⃣ Mix the Sauce

  1. Stir in gochujang, soy sauce, honey, rice vinegar, sesame oil, and a splash of water.

  2. Mix well until the sauce is smooth, glossy, and bubbling.


4️⃣ Finish Cooking the Chicken

  1. Return the seared chicken to the pan.

  2. Spoon the sauce over the top and let it simmer for 3–5 minutes, turning occasionally.

  3. The sauce should thicken and cling to the chicken as it finishes cooking.

  4. Check that the chicken is fully cooked (internal temp: 165°F / 74°C).


5️⃣ Serve & Garnish

  1. Plate the chicken and drizzle with extra sauce from the pan.

  2. Sprinkle with sesame seeds and green onion slices.

  3. Add a squeeze of lime for a pop of freshness, if desired.
