🍄 Fried Enoki Mushrooms
Light, crispy, golden on the outside — and unbelievably juicy on the inside! These fried enoki mushroom bundles wrapped in nori are addictive and so easy to make. Save this recipe, because you need to try it! 🤎✨
🍄 Ingredients

1 pack (300 g) enoki mushrooms

2 nori sheets, cut into 1-inch (2.5 cm) strips

½ cup all-purpose flour
-
⅓ cup cornstarch
-
½ tsp baking powder
-
½ tsp salt
-
¼ tsp white pepper
-
¼ tsp garlic powder
-
¼ tsp ground chili
-
¾ cup cold sparkling water or soda water
🍳 Method
1. Prepare the enoki mushrooms

Cut off the root end of the enoki cluster.

Separate the mushrooms into thin, flat bundles.
-
Slice each bundle in half if needed for easier handling.

Wrap a strip of nori around each bundle, moistening the edge with a little water to help it stick.
2. Make the batter

In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, white pepper, garlic powder, and ground chili.

Pour in the cold sparkling water and whisk until the mixture becomes a smooth, pourable batter.

The consistency should resemble pancake batter — if it’s too thick, add a splash of water; if too thin, add a little extra flour.
3. Fry until golden

Heat oil to around 170–180°C (340–355°F).

Dip each enoki-nori bundle into the batter, allowing excess to drip off.

Fry in batches, making sure not to overcrowd the pot.

Cook until the mushrooms turn golden and crispy.

Transfer to a wire rack or paper towel–lined plate to drain excess oil.
4. Serve hot

Enjoy immediately while the mushrooms are hot and ultra-crispy.

Serve with your favourite dipping sauce — spicy mayo, sweet chili, or soy-garlic sauce all work perfectly.
