Crispy Roasted Edamame 🫛✨ (High-Protein Vegan Snack)

Welcome to episode 3 of High Protein Vegan!
This recipe turns simple frozen edamame into a crispy, savory, protein-packed snack — with 24g of plant protein in one serving. So easy, so fast, and so addictive! 🫶🏼


Ingredients

  • 200 g frozen shelled edamame (see notes below)

  • 1 tsp oil (avocado or olive oil works great)

  • Sea salt, to taste

  • Black pepper, to taste

  • Seasonings of choice — garlic powder and onion powder are perfect


Method

  1. Preheat:
    Heat your air fryer to 200°C.

  2. Season:
    Add the edamame, oil, salt, pepper, and chosen seasonings to a bowl.
    Mix until every piece is well coated.

  3. Air fry:
    Transfer to your air fryer basket or tray.
    Air fry for 15–20 minutes, shaking halfway through, until lightly golden and crisp.
    You can also bake them in the oven — just allow a bit more time and stir halfway for even cooking.

  4. Serve:
    Let cool for a few minutes (they crisp up more as they cool).
    Enjoy your protein-packed snack!


Tips & Variations

  • No need to thaw!
    You can cook them straight from frozen — just air fry a little longer.
    For extra crunch, thaw or microwave first, then pat very dry before seasoning.

  • Flavor ideas:

    • Chili flakes or paprika for a spicy kick

    • Lemon pepper for brightness

    • Nutritional yeast for a cheesy flavor

    • Smoked paprika + garlic for a BBQ-style taste

  • Oven method:
    Bake at 200°C for 25–30 minutes, stirring halfway.

  • Storage:
    Best eaten fresh, but can be stored in a container for up to 24 hours.
    Re-crisp in the air fryer for 3–5 minutes.
