Crispy Hashbrown Avo Toast 🥑🥔

Say hello to your new favorite breakfast! If you love avocado toast, wait until you try it on top of golden, crispy hashbrowns. It’s crunchy, creamy, fresh, and absolutely addictive 😍🤤


Ingredients

Base

  • Hashbrowns, air-fried or pan-fried until golden and crispy

Avocado Topping

  • 1 ripe avocado

  • Juice of ½ lime

  • Salt & black pepper, to taste

Fresh Toppings

  • Cherry tomatoes, halved

  • Homemade pickled red onion (or store-bought)

  • A handful of rocket/arugula

  • Fresh herbs of choice (parsley, cilantro, dill, or chives)

Seasoning

  • Everything Bagel seasoning

  • Chili flakes

  • Extra salt & pepper

  • Lime wedge for serving


Method

  1. Prepare the hashbrowns:
    Cook your hashbrowns in an air fryer or pan until they become perfectly golden and crispy. Set aside on a plate.

  2. Make the avocado mash:
    In a small bowl, mash the avocado with lime juice, salt, and pepper until smooth and creamy.

  3. Assemble the toast:
    Spread a generous layer of avocado mash over each crispy hashbrown.

  4. Add the toppings:
    Layer on cherry tomatoes, pickled red onion, fresh rocket/arugula, and your herbs of choice.

  5. Season:
    Sprinkle Everything Bagel seasoning, extra pepper, and chili flakes on top.

  6. Serve and enjoy:
    Finish with a squeeze of fresh lime and enjoy immediately while the hashbrowns are still hot and crispy!
