Hashbrowns, air-fried or pan-fried until golden and crispy
Avocado Topping

1 ripe avocado

Juice of ½ lime

Salt & black pepper, to taste
Fresh Toppings

Cherry tomatoes, halved

Homemade pickled red onion (or store-bought)

A handful of rocket/arugula

Fresh herbs of choice (parsley, cilantro, dill, or chives)
Seasoning

Everything Bagel seasoning

Chili flakes

Extra salt & pepper

Lime wedge for serving
Method

Prepare the hashbrowns:
Cook your hashbrowns in an air fryer or pan until they become perfectly golden and crispy. Set aside on a plate. -
Make the avocado mash:
In a small bowl, mash the avocado with lime juice, salt, and pepper until smooth and creamy. -
Assemble the toast:
Spread a generous layer of avocado mash over each crispy hashbrown. -
Add the toppings:
Layer on cherry tomatoes, pickled red onion, fresh rocket/arugula, and your herbs of choice. -
Season:
Sprinkle Everything Bagel seasoning, extra pepper, and chili flakes on top. -
Serve and enjoy:
