A Cozy, Creamy, Spicy One-Pan Meal**
This dish brings together smoky bacon, tangy kimchi, rich cream, and chewy udon noodles—all in one pan. It’s warm, comforting, and loaded with flavor, making it the perfect quick meal for busy days.
Ingredients

2 slices beef bacon (or any bacon you prefer)

2 cloves garlic, minced

½ onion, sliced

1 green onion, chopped (plus more for garnish)

A few chives (optional, for garnish)

½–1 cup kimchi, chopped (adjust to your taste)

1 tbsp gochujang (Korean red chili paste)

¼ cup heavy cream
-
1 cup water, added gradually
-
1 pack udon noodles (fresh or frozen)

Salt & pepper, to taste

Chili oil, for topping (optional)
Instructions
1. Render the Bacon

Heat a pan over medium heat.

Add the bacon slices and cook until the fat melts and the pieces turn crispy.

Remove the bacon from the pan and set aside, leaving the flavorful rendered fat in the pan.
2. Sauté the Aromatics

In the same pan with the bacon fat, add the sliced onion and minced garlic.

Cook for 1–2 minutes until fragrant.

Add the chopped kimchi and sauté for another 2–3 minutes until softened and lightly caramelized.
3. Add the Flavor Base

Stir in 1 tablespoon of gochujang.

Cook for 20–30 seconds to help the paste blend with the kimchi and aromatics, deepening the flavor.
4. Make It Creamy

Pour in ¼ cup heavy cream.

Add about ½ cup of water.

Stir until everything combines into a rich, orange-red creamy sauce.

Let it simmer gently for 1–2 minutes.
5. Cook the Udon

Add the udon noodles directly into the pan (no need to pre-boil if using fresh or frozen).

As the noodles loosen, gently separate them using tongs or chopsticks.

Add the remaining water gradually as needed until the sauce reaches your desired consistency—thick and creamy or slightly more saucy.
6. Finish & Serve

Season with salt and pepper to taste.

Stir in the green onion.

Add the crispy bacon back on top.

Garnish with extra green onions, chives, and a drizzle of chili oil for extra heat.
