Chili Oil Pasta 🌶️🍝

Ingredients:

75 g spaghetti or linguine

2–4 tbsp chili oil (adjust based on preferred spiciness)

½ onion, finely sliced

2 cloves garlic, minced

½ cup heavy cream
-
½ cup reserved pasta water (adjust as needed for sauce consistency)

½ tsp paprika

Salt & pepper, to taste
Instructions:

Cook the pasta:

Boil pasta in salted water until al dente.

Reserve about ½ cup of pasta water before draining. Set aside.

Sauté aromatics:

In a pan, heat the chili oil over medium heat.

Add the sliced onion and minced garlic, sauté until fragrant and lightly golden.

Build the sauce:

Pour in the heavy cream and stir to combine.

Season with paprika, salt, and pepper.

Combine pasta and sauce:

Add the cooked pasta to the pan.

Slowly pour in the reserved pasta water a little at a time until the sauce reaches your desired consistency.

Toss well to coat the pasta evenly, giving it a glossy finish.

Adjust the amount of chili oil to control the heat. Start with less if unsure.
