🍜 Chili Oil Noodles with Crispy Fried Egg
My favorite easy 10-minute meal — spicy, aromatic, and incredibly satisfying 🤗
⭐ Ingredients (1 serving)

1 serving noodles (ramen, rice noodles, wheat noodles — any type works)

1–2 tbsp chili oil (adjust to spice level)
-
1 tbsp gochugaru (Korean chili flakes, optional for extra heat)
-
1 egg
-
1–2 cloves garlic, minced
-
1 green onion, chopped (separate white & green parts)
-
1 tbsp dark soy sauce
-
1 tbsp Chinese black vinegar
-
1 tsp hot honey (or more to taste)
-
Salt & pepper, to taste
🔥 Instructions
1. Cook the noodles
Boil noodles according to package instructions until tender. Drain and set aside.
2. Make the crispy fried egg
Heat chili oil in a pan over medium heat.
Crack in the egg and fry until the edges turn golden and crispy.
Season with salt and pepper, then remove and set aside.
3. Build the flavor base
Turn off the heat.
To the remaining hot oil, add:

Minced garlic

Gochugaru (optional)
-
White part of the green onion
Stir gently so the residual heat releases the aroma without burning the garlic.
4. Add the sauces
Pour in:

Dark soy sauce

Chinese black vinegar
-
Hot honey
Mix until everything is combined into a glossy, spicy sauce.
5. Toss the noodles
Add the cooked noodles into the pan and toss until every strand is well-coated.
6. Serve
Transfer to a bowl and top with:

The crispy fried egg

Green part of the green onion
Adjust chili oil or gochugaru as needed for your spice tolerance.
