Ingredients:
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Pinch of salt
Directions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the peanut butter and granulated sugar until smooth.
Add the egg and vanilla extract to the peanut butter mixture. Beat until well combined.
In a separate small bowl, whisk together the baking soda and salt. Add this mixture to the peanut butter mixture and mix until incorporated.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
Use a fork to flatten each cookie slightly and create a crisscross pattern on top.
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
