 CHEESY GROUND BEEF ENCHILADAS are a super easy, simple, and delicious enchilada recipe that are great for feeding a crowd.

Ingredients:
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 (10 oz) can red enchilada sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper to taste
8 large flour tortillas
Chopped fresh cilantro, for garnish
Sour cream, for serving (optional)
Sliced avocado, for serving (optional)
Directions:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft.
Drain any excess grease from the skillet. Stir in the cumin, chili powder, salt, and pepper.
Pour half of the enchilada sauce into the bottom of the prepared baking dish.
Place a spoonful of the ground beef mixture onto each flour tortilla. Sprinkle with a mixture of cheddar and Monterey Jack cheese.
Roll up the tortillas and place them seam side down in the baking dish.
Pour the remaining enchilada sauce over the top of the enchiladas. Sprinkle with the remaining cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish with chopped cilantro before serving. Serve with sour cream and sliced avocado, if desired.
